Winter Fruit Salad

We are out of town for work this week but wanted to post some recipes for Thanksgiving dinner. Here’s a nice salad for a first course. This recipe came from a church potluck dinner. The colors of the ingredients make it a good salad for a holiday dinner. The dressing resembles a cross between a sweet and sour and white French dressing. I highly recommend it. To save calories, serve the dressing on the side and dress the salad sparingly.


Winter Fruit Salad


Dressing:
12  packets of Splenda
1/2 cup lemon juice
2 TBS. Diced Onions
1 tsp. Dijon mustard
1/2 tsp. salt
2/3 cup vegetable oil


Blend the above ingredients in a blender until smooth.


Salad:
1 head of romaine lettuce, torn into small pieces
1 red apple, diced
1 green apple, diced
1/4 cup dried cranberries
4 oz. shredded Swiss or mozzarella cheese
1  cup cashews or other nut

Layer the above ingredients in a salad bowl in the order shown. Top with dressing just prior to serving.
