This week’s BariBeary Simple recipe comes from the National Turkey Federation web site’s recipe database.There are some very tasty healthy recipes. It is especially nice that they have the recipes categorized with high protein recipes being one of the categories. That is pretty handy for bariatric patients who are on the lookout for healthy high protein foods.

This recipe takes about 10 minutes to prep and 20 minutes to bake. The tomatoes and fresh basil really gave it a super fresh taste. I served it over greens dressed in a fat free Italian vinaigrette dressing.

Yield: 4

1/4 Cup grated Parmesan cheese
1/4 Teaspoon Italian seasoning
1/4 Teaspoon salt
1/4 Teaspoon freshly ground black pepper
1 Pound turkey cutlets
1/2 Cup fresh basil, julienne-cut
2 Roma tomatoes, seeded and julienne-cut
As needed olive oil cooking spray
1/4 Cup seasoned bread crumbs
As needed mixed greens
As needed vinaigrette dressing

Preheat oven to 375  degrees F. In small bowl combine cheese, Italian seasoning, salt and pepper. Sprinkle mixture evenly over one side of cutlets and top with basil. Divide tomatoes equally over cutlets. Roll cutlets up, jelly-roll style, to encase tomato and basil mixture. Spray each bundle with olive oil and coat with bread crumbs.

Place bundles, seam side down, on (14 x 9 x 1 inch) baking sheet sprayed with olive oil. Bake at 375 degrees F for 20 to 25 minutes or until food thermometer registers 170 degrees F and turkey is no longer pink in center.

Serve bundle on bed of mixed greens tossed with vinaigrette dressing.
